4 Ingredient Pesto-Crusted Baked Salmon

Here I go again with my easy peasy, no brainer recipes. Yup, it only takes 4 easy-to-find ingredients to make this dish! Baked salmon is my go-to recipe when I have friends over because it's so uncomplicated yet elegant - as if it takes a great deal of effort but in reality, you'll only need 15 minutes or less to whip it up!

I particularly love how the vibrant colors of the pesto and salmon brightens up a plate. Honestly, I am no pesto fan. I had a bottle stored in my pantry for months (why did I even buy it? I have no idea lol) and I finally decided to make use of it because it was about to expire.


I added in parmesan to lessen the "leafy" taste, and mixed in panko crumbs for that added crunch and texture.


Note: You can may use home-made pesto. I have YET to try this!

For the salmon, I removed the skin and had it filleted. A slab weighs approximately 125g, but this is entirely up to you! I prefer mine to be thick so I get that moist, flaky center easily.


When the salmon is baking, make sure to watch it like a hawk. I can't stress this enough! Depending on your oven, salmon can get overcooked really fast (a minute difference can do this, trust me). I start keeping a closer eye once it reaches the 6-minute mark.

Pro-tip #1: You can make the pesto topping ahead to save you even more time! It can keep in the fridge for 5 to 7 days, stored in an air-tight container.
